In this week’s Farmer’s Choice bags, we suggested pea shoots from Ironwood Farm, red beets, green cabbage, yellow onions, and carnival squash from Juniper Hill Farm, eggs from Dog Wood Farm, and fair trade, organic raw walnuts and dried cranberries from Tierra Farm.
For our members who add meat to their bags, we suggested a half chicken (approx. 2.2 lbs) from Letterbox Farm. For those that customized, we had over fifty items available this week; not bad for the middle of winter!
If you’re in need of a little inspiration for the kitchen this week, we’d recommend trying the following: roast the cabbage in wedges and topping with toasted walnuts, or making a pea shoot salad with chopped walnuts and dried cranberries. A favorite sandwich is chicken salad (great made with your Letterbox Farms half or whole chicken) with walnuts and cranberries, topped with chopped pea shoots, and served on Hawthorne Valley Farm’s sourdough bread. Toasted walnuts are also delicious on roasted sweet potatoes. We hope you enjoy!
